Tea–infused walnuts and spiced fennel to start; spicy duck on oats with smoked beetroot, gingered apricot and kale; slow cooked beef short rib on wilted iceberg with tendon (the connective tissue not the Japanese tempura rice bowl) and wood fungus – layer upon layer of flavour and texture lending the simple little dining room a glow of culinary exuberance.
