But clearly she possesses all four qualities in great measure. Her cooking is innovative, presenting a whole spectrum of unexpected flavours without a hint of avant-garde gimmickry. There’s a knockout entrée of jasmine tea-smoked smoked chicken with crisp, delicate enoki mushrooms and shaoxing rice wine, and her combination of spicy duck on oats, smoked beetroot, gingered apricot and kale is inspired. Caramelise pork hock is another stand out, and desserts are also delightfully decadent. The local confessional is probably sick of hearing about salted caramel ice –cream with peanut, popcorn and wattle-seed cream. Wong’s food tastes of nothing you’ve ever eaten before… and everything you’ll never forget.
